We’re very excited to share our most recent collaboration which is something quite different… Oyster Gin. We have partnered with Michelin-starred restaurant mana to use oyster shells in a unique new spirit.
Mother of Pearl is a delicate yet sophisticated gin inspired by the wild coasts of the north, and brings a taste of the sea-breeze to our rainy city. In Mother of Pearl, we distil with the oyster shells from mana restaurant, which we break down before loading into the still, just like any other botanical. To balance the gin, we have added flavours from fresh pine and zingy citrus, adding to the complex coastal flavours in every sip.

How to serve Mother of Pearl?
For a classic G&T, Mother of Pearl is perfectly served with ice, a Franklin & Sons Light Tonic and garnished with a slice of fresh lime and basil.

From Friday the 24th of September until the end of October you can try a fresh or deep fried oyster free with every Mother of Pearl drink you purchase. Try a fresh oyster with shallot pickling, fresh lemon juice and a splash of tabasco for a hint of spice, or our deep-fried option with a saltwater mayonnaise for something a bit different.
Mother of Pearl is available as a classic G&T with a Franklin & Sons Light Tonic or try it as a Mother of Pearl martini.
