Sage & Lemon Thyme Sour
This is a refreshing woodland of a drink. Sweet, sour and herbaceous, it is our answer to a classic sour with our earthy, pine fresh Wild Spirit gin and a celebration of sage and lemon thyme.
50ml Wild Spirit Gin
30ml Fresh Lemon
20ml Sage and Thyme Syrup
2 Fresh Sage Leaves
1 Fresh Thyme Sprig
0.75ml (3rd of a Pipette) Mrs Betters Bitters Miraculous Foamer
2 Dashes Mrs Betters Cypress Bowl Bitters
For the syrup: 200ml Water and 200g Sugar in a heavy bottomed pan with the fresh thyme and sage. Gently heat to a simmer until the sugar has dissolved and the liquid has turned a light green. When the sugar has dissolved remove the liquid from the heat and leave to cool with the herbs in it. Remove the herbs and bottle once the liquid has cooled.
For the drink: Place all ingredients except the cypress bitters in a shaker and shake over ice. Once you have the right dilution strain off the ice and shake again to really emulsify the foam. Pour into a chilled coupette or nick and nora glass, and garnish with a sage leaf and three drops of the cypress bitters.
