Warm spiced cherries is the first thing we picked out on this drink. It should be both super fresh and lovely and warming, the puree gives the velvety smoothness that takes this drink to the next level. Perfect to cure the ailments of the evening before and pick you up ready to crack on with piecing that roast together. This drink celebrates the peppery warmth of the Grains of Paradise (a type of pepper) we use in all of our gins.


50ml Wild Spirit Gin
50ml Tomato Juice
2 Tsp Beetroot Puree
20ml Fresh Lemon Juice
4 Dashes Tabasco Sauce
4 Dashes Henderson Relish
1 Tsp Good Chili Jam
Salt & Pepper To Taste


First job in this drink is the beetroot purée. Take one beetroot, put it in a pan and cover with water. Add 25ml of white wine vinegar and 50g brown sugar to the water and cook on a medium heat until you can easily slide a knife to the center of the beetroot. When cooked, peel while hot with gloves on and blend. Season with sugar and salt to taste.

For the drink: Assemble all ingredients in a Boston shaker over ice. Using a Hawthorne to hold the ice pour the liquid back and forth between the two shaker pieces, until you feel you have the correct dilution (tasting all the way through is a must!!). Garnish with a fresh lemon wedge and a sprig of thyme.
